Ingredients
- 2lbs ground beef or ground turkey
- 3/4 c Rosie’s Collection Salsa
- 1/2 c corn meal or bread crumbs
- 3 eggs, slightly beaten
- 1/2 t salt
- 1/4 t pepper
- 1/2 t Worcestershire sauce
- 1 c shredded cheddar cheese
Instructions
- Preheat oven to 350.
- In a large bowl, combine meat, 1/2 c salsa, corn meal/bread crumbs, eggs, salt & pepper. Mix lightly.
- Press 1/2 c mixture into 12 lightly greased muffin cups.
- Brush tops with remaining salsa (Usually a bit more).
- Bake 30 minutes.
- Remove from oven & top with shredded cheese.
- Place in oven for 1-2 more minutes.
Makes 6 servings. These can be frozen after being cooked. Then thaw & re-heat. Enjoy!
